Seamless transition from R7800 to AXE11000?

If you just replace the R7800 with the new one, and the latter uses the same subnet (192.168.1.1 or similar) and the same SSIDs for wireless, then you won't have too many issues with your devices. Most will reconnect to the new router just fine.
