AC1200 WiFi Router Dual Band, How do I switch from 5 GHz to 2.4 GHz?

AC1200 is a speed, not a model. Which router do you have?
Are you asking how to switch a device from connecting from 2.4ghz to 5ghz?
Did you name the ssid's different in the wireless settings? If so, you simply select the 5ghz ssid when you're connecting via your wireless device.

I have a Netgear AC1200
We bought a new 985 Roomba vacum and it only uses 2.4 GHz to connect to our WiFi.
Don't these routers normally defalt to use 2.4 GHz and not 5 GHz?

Again, AC1200 is a speed, not a model. Look at the label on the device and it'll have a model number on there.
If its a dual band router, both bands broadcast at the same time.
If you're trying to setup your roomba, first make sure your phone is connected to the 2.4ghz band and then go through setup. Otherwise most devices can't be setup from your phone if its not on the matching band.
You can log into the router to see the name for each band by default. or you can even change the ssid/password for the bands.
