After many failed attempts at getting the WiFi extender to work, I ended up returning it to the store.
Swapped it over for a TP Link, which has worked perfect, so I think it is something glitchy with the AC6110 given two of them gave me this trouble. Thanks for your help with the troubleshooting :)

The modem/router is not having an issues with connection. When I connect straight to the modem/router there are no issues with it disconnecting.
I am using a Telstra Smart Modem/Router https://www.telstra.com.au/internet/extras/modem
I am unsure what firmware the extender has. How do I check this?

the firmware version should be on your extenders status page.
If it was a single extender that had this issue, I'd be inclined to point at the extender. but when multiple devices have the same issue, its usually points to either the location its in, wifi interference, or the router.
Have you tried moving the extender closer?
Tried factory resetting the extender and re-doing your setup?
have you tried changing wifi channels on the router to a less congested channel?

Excellent. I just found it (Firmware Version: V1.0.1.62). I checked for any updates online and after checking the system said all is up to date.
I have tried a factory reset of the extender before and am now reconnected to the internet via the extender. I will check again tomorrow and see if it is still connected or if it has dropped out again. I am unsure how to change wifi channels for the router or how to work out if the channel is congested. I live on a rural property, so I dont think it could be wifi interference, but might need you to explain that to me.
