EX8000 connects to router, but no internet - Spectrum Router
Extender is connected to the router, but there is no established internet connection. I've attempted updating the firmware, but mywifiext states that it cannot be done due to the lack of internet connection.
I've power-cycled the modem, router, and extender. I've also changed the channels from Auto to various different channels. Not sure what to do next. The router is a Spectrum Wave 2, and I'm broadcasting both 2.4 and 5 gHz.

you can manually update the ex8000. Might not fix the issue if its the spectrum router causing the issue though. ISP supplied routers aren't exactly known for high quality.
The manual does walk you through updating firmware manually. You could also try hooking it up as an AP and updating it that way.
for the spectrum router, try setting a static ip address for the extender within the spectrum routers settings.
