Have a AC1900 Modem/Router. Buy an extender (EX7000) or new WiFi 6 mesh system? almost same price.

I currently have a AC1900 modem/router but have a dead spot in my house.  I am looking at the suggested range extender for the AC1900 which is the EX7000.  I also see if can get an Orbi system with a router and a satellite for about the same cost.  Would I be able to use my AC1900 as the modem to connect to the Orbi?  If so, what is the better option for coverage and speed?  thanks

Yes. You just want to be careful of a double nat (2 routers running in router mode). You didn't put which modem/router combo device you have but most have a modem only mode.

You can place the combo device in modem only more or you can place the orbi in Access point mode.

If its not much extra, I'd go the orbi route. It'll be more seamless operation and you can always add satellites as needed.
