How to have my extender have its own channels separate from my main router.

In general, the extenders must operate on the same channel like the primary wireless router. There is always only one radio handling the connection to the router, and providing the extender access point service.
On all the newer Mesh extenders, the SSID is the same you connect the extender to the primary router first. The SSID is the same, and has no EXT postfix on the SSID like the basic extenders have. The fine documentation does shoe this very clear, for example the AC2200 Nighthawk X4 WiFi Mesh Extender User Manual, on p.13
