Thanks again for all of the replies.
My long-term goal is to have a wide reaching network once I move my office out of my house in to a finished tuff shed in my backyard, so it’s sounds like I either need to buy a proper mesh network or bury an Ethernet cable from my extender out to the my new office (which will be closest to where the EX8000 is).

I'd bury the cable. The time you spend to bury your own cable will be worth the performance and hassle of fighting to get stable internet in detached locations.
