I think I've figured out the problem, but it doesn't appear to be solvable.
When I am connected to my _ext network, my iPhone shows an IP address in the correct range – I use 10.x.x.x.
However, when I look in the WN1000RP connected devices screen, it shows the iPhone with an IP address in the 192.x.x.x range.
Sadly, there doesn't appear to be a way of forcing the WN1000RP to distribute a range of 10.x.x.x addresses instead of 192.x.x.x addresses.
