I have used the EX8000 - for eval some time ago, as my router system is an Orbi RBK50.
The EX8000 has the same radio performance as the Orbi RBS50 (triband), so it should give good results for you. If you use it in extender mode, you can dedicate one of the 5G radios for the EX8000->router connection (using fast lane), and use the second 5G radio for your devices. That gives you the best performance in extender mode. The main drawback (which applies to all extenders) is that you need to place the EX8000 where you can get a solid (preferably 5G) connection to the R7000 WiFi.
If you can run ethernet to the EX8000, then you could also use it in AP mode, which eliminates any concerns about the quality/speed of the wifi backhaul. If you do that, you'd also be able to use all three bands for your clients.

Thanks StephenB for your answers and support! I was using the Netgear Wi-Fi analyzer the other day and noticed my Arlo Pro base was using the same 2.4G channel as my Netgear r7000 AC1900 router. I changed my router to another more vacant and typical router channel 6.

I found out later my Arlo Pro base automatically follows the strongest 2.4G signal so it will always change soon to whatever channel my router is on.
I did purchase the Netgear EX8000 extender and my Netgear AC1900 r7000 router and updated the same day. The Netgear EX8000 setup went smooth and worked well where I had planed to place it. I also updated the firmware in the Netgear EX8000 extender and my Netgear AC1900 r7000 router purchased in 2015. Soon I started having issues with android devices and access speed. A few hours later there were websites no one could reach including one PC connected directly to my Netgear AC1900 r7000 router. I rebooted all devices (extender, router, modem, devices) a few times to no avail. Most websites did not work but some worked well. Checked and tried changing a couple of router settings without success. Finally I tried hooking my PC directly to the modem without the router. All of the issues went away which meant the router was the issue. Uploaded some saved router settings from Jan 18 and all issues went away. In the end the Netgear EX8000 has sped up my access speeds and increase my coverage.
