Exact same issue, on my R6400. Simply dissapeared. Trield rolling back to several different firmwares and tried to wipe config several times. Tried updating to the R6400v2 firware to see if that helped and no. Tried DD-WRT and it does not even give an option for the 5GHz as if the physical 5G has died.
I notices from the main page of Advanced where it shows you a general overview some strange characters in the wifi channel as if the GUI cannot read the current wifi channel from the physical wifi device.

Fixed it!
What I actiually did:
Rolled back to first firemware released
Tried auto update wich failed, seemed to be trying to only go as far as second to last update
Manualy applied second to last update
Still not working
Found thread about disabling security - Nope
Another sugestion change region - Nope
However!!!! I did notice the channel now said 0 on the Advanced home screen and changing channel did not result in a reboot just updates
Switched back to Europe and we are now back to reboots on changes ughhhh
Then is occured to me the config cannot possibly be currupt since its been wiped 1000 times but is it possible its held in a currupt state somewhere else in the device. I belive but i'm not 100% on this but that when you save config its writing the config to the radio device and becouse the reboot does not actualy remove the power from the phycial radio device its stuck there in a currupt state.
Guess what worked after all of the above, unplugged it for 2 min and plugged it back in. FFS
