Is it possible for me to assign 2.4 and 5 manually to each device? It appears I can only utilize the 5’s by turning on smart connect.

It's up to devices to pick and chose where they connect to. Is you need separate SSIDs then disable Smart Connect.
If you log into your router and disable smart connect, then you can seperate them out. Make sure after disabling smart connect to go in and change the ssid' names to what you'd like. That way you know which network is which.
