What firmware are you on?
What modem/gateway is it connected to?
What speeds do you pay for?
What speeds do you get wired?
Does it only happen on zoom or on different streaming services as well?

Firmware: V1.3.1.64 (up to date).
Speeds, per the NightHawk app:
Download: 202.81 Mbps
Upload: 36.73 Mbps.
Ping: 11.68 ms
CableModem: Optimum/Arris: TM1602A (worked fine with my older, slower NetGear router).
Definitely happens during Zoom conferences; I need to check some others.

Test the speeds on the devices having issues (and in the location they're used in), not via the nighthawk app. The app hosts the test directly on the router and won't reflect your wireless speeds/issues.
Did it just start or has it been going on since you got the router?
Are your devices on the 2.4ghz of 5ghz signal? (hint 2.4ghz is slower and suffers from more interference)
It shouldn't impact zoom but you could try disabling sip alg and rebooting the router.
