    The R8500 lets the user disable either of the two 5G bands.   The 5G-1 radio is limited to the lower 5G channel range, the 5G-2 radio is limited to the upper channels.

Usually not.  You can see if it allows that on the wifi setup page.

I can see I have the option to disable 5Ghz (all bands) but not individually.

I can see that from your user manual.  Most of the tri-band routers will let you do that, but apparently not yours.
