What brand and model head sets did you test?
Are these head sets wired or wireless?
I have a Turtle Beach Elite and Plantronics Rig Pro 500, both wired and don't experience any issues with my Xbox controllers or headsets.
You might try all wired heatsets to the game controller and wire the controller to the game console to test.
I gave up wireless headsets years ago due to some interference problem and having to maintain batteries.

Wired. Always wired. I plug the headset into the controller because I don’t feel like dealing with the amp anymore lol. I have 2 Astro A40 headsets. Used a skull candy one and then a wired Sony.
When my controller is connected to the console(Bluetooth off mode)or when I use my amp I have zero issues.

Also sounds like a bad interference handling with the controller when it's wirelessly(BT) connected to the console. Something you might ask Sony about.

Contacting Sony? Why? It works perfectly at another residence as I have stated. And I have 3 different controllers tested. 2 for PS5 and one for PS4. I just can’t imagine what they would add to the conversation besides check your router and your neighbors
Believe me I wish it was a controller issue. I could simply replace or repair

And you turned OFF the wifi on the R7000 and checked with this configuration and still have interference problems?
Also had this been working before or has this been something that just started happening?
