How to change my netgear nighthawk to be an extender not a router?
You don't with stock firmware.
You can try installing 3rd party firmware (like ddwrt) that might have those capabilities.
That would void your warranty and put you at risk for bricking your device but its an option.

Or use Access Point mode with a wired router to R6700v3 connection.
