It's very old so mainly single brick. It's mainly open-plan inside with no doors downstairs. So, the question remains: do the signal extenders actually work and will they be better than I already have?

Brick makes it very difficult for Wi-Fi signals. Your two best options are to run an Ethernet cable from your router to a wired access point or use a power line type extender.
