Different routers seem to have different behaviour.
And "Access Control" and "Attached Devices" are different. Access Control remembers devices that are no longer connected.
The naming thing is one area where there are known problems. People try to name things in the browser graphical user interface (GUI) and it doesn't stick. In my case, I use the Netgear desktop genie, which seems to work.
Netgear is trying to kill this useful utility, but for the time being you can find it here:

Be warned that the genie installation file is wrapped up in a RAR archive that you have to decompress.
I also find that the Nighthawk app and the GUI don't always work in the same way.
When it comes to Mac addresses, you can track then down with the Mac address lookup.

Thank you for the reply. I used the MAC lookup sites as well as just submitting the OUI information in another database. The result was the MAC and OUI were not in any database. Apparently this is caused for two reasons. #1. The manufacturer chose to not register. #2. The manufacturer IS registered, but makes their own MAC which may not conform to IEEE or anyone but themselves. All of my known 41 devices are accounted for except for the two missing from the list. Both of them are TPLink and entering their MAC addresses in the MAC lookup sites results in positive identification.
As for the two missing devices your description of Netgear being woefully caviler about their software/firmware I'm guessing that these two seperate, but related issues will remain unresolved. Perhaps when another firmware upgrade comes down the pike I can expect (ha ha) improvements.

There is a third possible reason. Apple, Samsung and Microsoft have taken to using what they consider to be an extra security measure by assigning random mac addresses to things.
Here's a local note on what can happen in mobile phones:

I have no idea how these randomised addresses would play on the lookup sites.
Perhaps when another firmware upgrade comes down the pike I can expect (ha ha) improvements.
The R7800 does get firmware updates, but nothing of much substance, mostly security. This is an excellent but ageing (2017) router.
I have no idea how my R7800 handles attached devices. It isn't something that worries me. I use the desktop genie to keep track of, and access, devices on my small network.
