The interference doesn't appear to be constant as the reboot gets back up to the 160 Mhz bandwidth with channel 50(44) - 160 Mhz and after a day it goes back to channel 42(44) - 80 Mhz. The bonded channel numbers are from the wifi analyzer apps in my phone.
I am using using manual channel 44, it's the same result with channels 36-48. My Android phone and my wife's iPhone support wifi 6 and the 160 Mhz bandwidth in the 5 Ghz band. The firmware for the router is the latest available version.

Possible the phones are picking the lower bandwidth based on noise, interferences and distances?

No, I see only channels 36-48 selected in the 5 Ghz band in the router interface too but speed still remains at 5.8 Gbps.

You might check a wifi scanner and see what all wifi signals are neighboring around you for interferences.
Where are you determining the 160Mhz then 80Mhz change on?

I see a couple of neighbors using the same channel 44, but one neighbor keeps changing from channel 44 to 157 back and forth.
The bandwidth change is determined from the Wifiman and wifi analyzer apps and also from my phone connection information. The speed also drops by around 200 Mbps downstairs when the bandwidth gets reduced to 80 Mhz. The router advanced index interface also reveals the channel change when the DFS channels are excluded the bandwidth drops to 80 Mhz.
