Space usage in BTRFS is a slippery concept, and turning on quota for the volume tells the file system to track it more accurately.  So the setting has a non-intuitive name (unfortunately inherited from the BTRFS folks).

Even if you don't use quotas to limit disk space on any shares, it's helpful fo enable quota on the volume.  Without it, you won't see the space used by snapshots or even the space used by each share.  You can change it at any time, so if you can try it after you get data loaded onto the NAS.  Just look at the shares page, and compare what you see when Quota on and off.

Are you talking about Pictures, Documents, etc?  Or are you talking about something else?

If you destroy and recreate a volume, the system won't recreate the default shares (Picture, Documents, etc).  It will after a factory default.  There's nothing special about those shares - you can delete the ones you don't care about, and create them manually when you recreate a volume.
