Hello, I want to transfer all my data to another kind of NAS, but I also need the drives from which I am transferring data on the new NAS. Is there a way to gradually, while the transfer progresses...

No easy way. If you remove one disk, you lose RAID protection - not ideal, but you can do it. But when you remove the second disk, you lose all your data.
If you are very skilled with linux, software RAID, and the ext file system then it is possible to move enough data off the NAS to allow the file system and RAID array to be shrunk one disk at a time. But it is risky to do it, and I wouldn't recommend attempting it w/o a backup even if you do have the skills.
Besides being risky, that would be a long process. The array would need to re-sync every time you shrink it.
Since you don't seem to have a backup of your data, you may want to consider keeping the Pro6 as a backup device. In your new NAS, you could then use fewer, larger drives, leaving some slots free for future expansion.

Note his explanation assumes OS 6. If you are running the usual 4.2.x firmware on your Pro-6, the details would be a bit different.
