Using which client(s) and server(s)? :) PLEX? ReadyDLNA? PLEX DLNA? Phone? Computer? PS3? Roku? Smart TV?
There are so many possibilities, that it's hard to put "streaming was slow and of low quality" into context without a liiiitle more background info in terms of which paths you attempted with the MKVs.
