In order to run two volumes like that, you need to be in FlexRAID mode. Once you are there, the ReadyNAS will not automatically do anything with new drives, but it gives you the option to do them.
I don't quite follow your sequence of events, so it's hard to say that it will let you do what you ask. If your sequence is that the NAS contains two 2-drive RAID1 volumes and you remove the drives of one volume and replace them with two more blank drives (for a total now of 6 drives), then you can create a new RAID1 from the two new drives.
But if I read between the lines and you intend to swap in and out the "retired" volume, that's not a good plan. The hardware's not designed for it.
