Going from X-RAID2 (RAID 1) to RAID 6
I am currently running my RN 204 with 2 x 2TB WD Red, and I an considering eventually ending up with dual redundancy.
What would be the best way go get there?
Should I add 1 disc and expand to RAID 5, and when the resync completes add a second disc and convert to RAID 6?

Yes, when the resync to add the third disk completes and the volume has expanded disable X-RAID and follow the instructions in How do I add protection to a Flex-RAID volume on my ReadyNAS OS 6 storage system? then once the sync to convert to dual-redundancy completes re-enable X-RAID.
If the NAS is used for primary storage of important data you should of course update your backup before starting the process of adding disks.
