You can use the command line of your PC. e.g. in XP/2003, go to Start > Run, type cmd and press enter.

I haven't tried the OS reinstall as I do not want to lose the current iSCSI datastores if I can help it. Whilst this is a test system, it will be going live soon enough and I need to be able to fix these types of issues on a live system without drastic measures.
An OS Re-install wouldn't touch your iSCSI data stores.

If the apache config file was messed up wouldn't I lose access to most if not all the web interface? (not that up on apache configs so not 100% sure if this is the case). You're right I think a call to support might be in order :)
The /etc/ietd.conf (included in the System > Config Backup) file is used for iSCSI. If there is a problem with this only the iSCSI section would be affected.
There is a newer firmware RAIDiator 4.2.19 available now (4.2.20 is expected to hopefully support iSCSI with ESXI 5), but I would work with support before updating the firmware.
If only the current LUNs are listed, deleting the files in /c/.iscsi for the deleted LUNs should be enough to rectify the problem. After doing that updating the firmware would be recommended as 4.2.19 addresses a problem for iSCSI: http://www.readynas.com/RAIDiator_x86_4_2_19_Notes
