I don't recommend the WD20EFAX.  Instead use the WD20EFZX (in the Red Plus line).  Note the WD20EFRX was rebranded as Red Plus a while ago, and the W20EFZX replaces it.  https://www.anandtech.com/show/15878/western-digital-cleans-up-the-red-smr-nas-hdd-mess

The WD20EFAX uses SMR technology, which is not well suited to RAID.  While it might work out in the Duo, it is best avoided.

The Seagate Ironwolf (ST2000VN004) would also work.

Yes.  It is best to begin by backing up your data (just in case the disks fail during that process).  Personally I also test the new drives in a Windows PC using vendor tools (WDC dashboard or Seagate's Seatools) before adding them to my ReadyNAS.

Then hot-swap the first drive with the new larger one (with the NAS running).  Wait for the RAID to resync before proceeding further.

After the RAID resyncs, hot-swap the second drive.  There will be another resync.  After that the volume will expand.  The second step (which includes the expansion) will take about twice as long as the first step.

The NAS might prompt you to reboot during this second step, so look out for that.
