Just to let you know that 10.5.7 fixed my original problem. It was only after getting a request for more info from Apple that I tried it again (I've been living in CIFS mode :cry: since the original problem).
I have attached the bug description from my original problem report below. If this isn't your problem, then you've got a different issue..

10.5.6 has serious problems with netatalk-served AFP shares.
Reproduce:
0. Configure a third-party NAS to share a volume by AFP
1. Mount the share via AFP
2. Try to copy a large file from one folder of the share to another folder on the same share. I am able to reproduce this 100% if I use the application Max to convert about 100 Apple Lossless files to MP3 (both the alac and mp3 files are on the AFP share)
Expected:
Files to be copied/read/moved.
Actual:
Finder begins to copy, then hangs. In fact, It hangs so badly that Force-quit stops working, and a hard reset is required (power button for 4sec)
