Is there any explanation for the restarts?
Does the volume resync after the restarts?

The issue comes from clamav.
After SEVERAL tentatives, I was able to get access to the WebUI, enable the SSH termina.
Then after other several tentatives, and timeouts I was in the prompt...
I used then
ps -eo pid,ppid,cmd,%mem,%cpu --sort=-%mem | head
to get the process list, and the clamav process was eating most of the ressources (~92%).
Plex instead was around 1%.
Now I disabled the antivirus functionality, and I did not observed any hanging since 24h.
In the log file there is no information about volume resync...
Where I can get it?

Look for "resilver" in the === maintenance history === section at the end of volume.log

I suggest checking the fullness of the root partition. It's only 4 GB, and the system will misbehave in several different ways if it is getting full. Normally it's around 25% used.

Checking the several files of the log, I found the DMESG log:
[Tue Nov 24 22:11:35 2020] Out of memory: Kill process 17676 (clamd) score 1373 or sacrifice child
[Tue Nov 24 22:11:35 2020] Killed process 17676 (clamd) total-vm:1059984kB, anon-rss:788972kB, file-rss:0kBSeems that out of memory error is occuring quite often..
