What do you mean by type selection on share to share backups? I cannot think of any share type that would be an option aside from the shares that you can select in the backup job menu. I believe that new and updated files are qualified for incremental backups and the ones untouched will no longer be part of it. With regard to your proposed backup job, I suppose it's not offsite and it can be done through multiple backup jobs on the same day but different time.
