Upgrading capacity
I currently have 3 x 3TB drives (6TB capacity) using X-Raid and I'm running out of space. My plan is to add a 6TB drive to give myself 3TB more total capacity, so that in the future I can replace one...

Yes. The capacity rule is "sum the disks and subtract the largest".
- 3x3 TB -> 9 TB - 3 TB = 6 TB volume size
- 3x3 TB + 6 TB -> 15 TB - 6 TB = 9 TB volume size
- 2x3 TB + 2x6 TB -> 18 TB - 6 TB = 12 TB volume size

It is sensible, though as you already know you'll need to wait a while to get the full benefit of the first 6 TB drive.
