When I delete a share it deletes my data as well

Basically each share is a separate folder in NAS file system, you delete folder, you delete its contents... ;)
Most simple solution would be, creating your own share, name it whatever you like and put data on it, not on shares which you decide to delete afterwards.
For example, if you dont need multiple shares and dont use factory ones, create Share named "public" and put your data in there.
Another option would be connect NAS with admin credentials (same as in frontview) and store your files directly on /c (but I wouldnt really recommend that, as it is not meant to function like that)
Also, if you have multiple family members you have to share out Admin/root password then and its generally a bad idea, so creating "public" share accessible for everyone would be much better.
Another thing which I`m abit uncertain is that they reappear, because I havent had that problem, still I never tried to delete built in Shares also, as I would need recreate those afterwards anyway.
Still noticed one thing, if you delete share via GUI, it will still exist in console (filesystem) for a while (this saved my ass once and I could recover all my files from there, after accidentally deleting wrong share).
