Are you accessing the NAS using the admin login? That would explain why you are seeing /e/. If so, the way to hide it is to use a different user log on. If you aren't using admin credentials, the volume name isn't seen when accessing the files - which is why there's no provision to change it. The intended way is for users to access the shares (often by mapping them to drive letters) - in which case the share name is the volume name.
AFAIK there is no easy way to recover data from a deleted share. Certainly there isn't one built into dashboard. Recovering deleted files from linux file systems is not easy - there is a utility called extundelete which claims to do it, though I don't know how well it works or what it takes to install it on an NV+ v2. It would require ssh access.
I am not sure why your deleted shares keep returning - I suggest a support request on that one.
