We don't really know for sure which Netgear device supporting an IoT network the OP is talking of here. As this was posted on the Idea Exchange for Business, one could assume it might be an AX6000 Tri-Band Orbi Pro WiFi 6 Mesh-System which does certainly allow a complete segregation for example of the IoT network as you are suggesting.
This does not change anything about the fact that hiding WiFi SSIDs is pure security by obscurity, not adding -any- security as commonly know nowadays.
