I would like to use these cameras to record the visits of various health care workers to my mothers house. These visits last about 30 minutes and are conducted between various rooms. Can these cameras be set up to record activity as long as there is movement in that area? I keep reading that they only record 2 minutes? Is that 2 minutes from detection, and that is all? or will they continue to record if activity is still going on?

You can use either timed recordings (10-120 seconds) or record until motion stops (up to 5 minutes). You'd need to determine which is more useful since the latter will stop when motion can't be detected by the camera after ~5 seconds. A reset period of a few seconds in then needed in either case before another recording starts.

If AC-powered, you could subscribe to CVR so you could monitor all activity 24/7.

So it could record the activity in one room, even if the activity lasts 30 minutes?

CVR will do that - motion recordings of any sort will not.
