Can I connect another router to this device? I want to run it from another room.

You can connect another router to it, just make sure that your have the 2nd router in access point mode or you'll have a double nat issue.

Thanks for your input. Very much appreciate it. I'm going to have to use a very long cable. Should I specify highspeed for that cable. I see there are cat8 cables. Would that be a good choice?

depending on what you're doing/plan for the future, cat 6 would be good for up to 10gbps at 100m.
