Nighthawk M6 Pro (MR6110) as Modem

Can I use the Ethernet port of the M6 Pro as a connection for a Netgear router and turn off the WiFi and thus and use the "other" Netgear (AX3000 or AX 3600) router as the primary connecting point for devices?

Yes you can.
you can either go into the MR6110 settings and put it in passthrough mode. or you could leave the MR6110 as router (with wifi off) and connect your other router to it with that other router in access point mode. I just did it on mine yesterday for trialing something.
