What options do I have for the aspect ratio? Like can I choose to have bars on the side or stretch (rather than crop) images?

You have 4 options: Auto, Contained (black bars on 2 sides), As Is (can have black bars on all sides, depending on the original aspect ratio), and Stretched (to fill frame).
