For basic connectivity, No gaming, is it recommended to remove old router, WGR61v10, and go directly to Spectrum modem? Or connect through old router and if this option is used will this impede speed of new R7000?

If you leave the old router in place, then you would need to put the r7000 into access point mode (AP mode). I do not understand why you would want to have an old box between the r7000 and the modem. IHMO, no question connect r7000 directly to the modem.
When you do there is a process you need to follow.
Power down both the modem and r7000
Now power up just the modem and let it initialize, about 5 to 7 minutes.
Now power up the router and if connected to modem the r7000 should be connected to modem and Internet.
