I haven't access to another modem/router but i'm fairly certain it is an issue with my BT Home Hub 5 as I have experienced the issue streaming from several streaming devices/computers. When I go to the routers homepage and disconnect from the internet my LAN streaming stops whatever source I have used.
I am fairly resigned to needing a new modem/router but have not a lot of cash at the moment and want to get something that will definetely do the job. Some kind of extender would be ideal but failing that I could replace my BT Home Hub 5 although I expect that would be more expensive.
All the extenders are going to go back to the router. Even in AP mode.
How are hosting your media and broadcasting them on your network? Are you using a nas, a server, a drive plugged into the router? What's going on there? Maybe we can look at it from that angle to get something working

I have a Windows 10 PC connected to my router over wifi which in turn connect to my speakers. The softeware is either Roon or Spotify.

possibly roon links back to their servers for streaming.
have you tried something like plex/emby for media sharing? You can actually set plex to run on the lan only and not link it online.

I have have tried plex and get the same problem. However, I don't know how to set it to run on the lan only.

You could try it 2 ways. First by disabling remote access. The other by using the dlna setup.
