Does anyone know when the AD7000 Nighthawk® X10 Smart WiFi Router will be available?

The R8900 Nighthawk X10 AD7000 Smart WiFi Router is a marginally spec'ed down (it does not offer the non-standard QAM256 on 2.4 GHz, so theoretical max rate 600 Mbit/s with QAM64 on 2.4 GHz) R9000 Nighthawk X10 AD7200. It seems to be available in selected markets on specific outlets only, since summer 2017 it's available with Costco in the U.S..

802.11ad is dead,

As I've already said: The R8900 was released last summer into a dedicated distribution channel.

Not many clients were available, indeed - thus 802.11ad never became mainstream. However, it does still exist, and it works amazingly for those having matching systems. Extreme high frequency, extreme requirements to make it right. Different priorities, different scope. Intel does still try to reposition 802.11ad - initially used for wireless docking stations by the way.

If anything the current AD routers are most likely to be EOL early.

Whatever EOL is in your mind. It's very unlikely Netgear does let the R9000/R8900 customers down by dropping updates early. Different from all the many other highly integrated platforms, these routers are based on a much more generic and open platform than anything else in the market. Still, I'm disappointed from what Netgear's ODM has made out of it. And that's not 802.11ad related.
