My second R6700v3 is arriving today, and I'm wondering, should I update the firmware as the first step? Or should I keep the firmware it came with and "see how things go".

I'm a fan of updating firmware for the most part. some devices have had issues but you can always downgrade them if you need to from the +view previous version in the downloads section.
Only thing I'd recommend:
1. do it over a hardwired connection. don't use the app
2. reset it afterwards. No telling which version came on the device and if its already at stock settings, you aren't goint to hurt anything resetting it after the firmware update.
If it doesn't work or you're having issues, then I'd try downgrading.
