The right router for you depends on what you will be doing with it. Web surfing, gaming, VPN, open ports for apps, how many clients and what bands?
The R7000 is good for most people.
The R7800 has a much faster processor and would be better for gaming and opening ports. But it is not as mature and you would incur greater risk of having issues with it.

Re: which router
The R7000 is more mature and less likely to have problems.
But the R8000 has two 5GHz radios and can handle more 5GHz clients without them saturating the 5GHz bands.
How many 5GHz clients are you likely to have in the next 4 or 5 years?
