Night Hawk AX12 vs AC1750?

System as it stands now:

AC1750 modem with five older airport expresses.

3,000 sqft two story home. Exterior walls are stucco and interior walls are thick plaster.

Download speeds at modem up to 180 mbps. Drops to to as low as 5 mbps in guest room and zero at the garage.

Streaming Netflix, Prime and Youtube on smart tv, computers and iphones not really a problem.

Spectrum internet and cable. Spectrum says it may be up to five years until the neighborhood gets fiber optic.

End Result:
Want to increase wifi mesh throughout the house and yard so that I can add either a pair of Nest or Arlo security cameras.

Question:

Would it be appropriate to get the AX12 along with the Orbi AX6000?

Considering that I probably won't get more than 200 mbps at the modem due to Spectrum limits, should I keep the AC1750 and add the Orbi AX6000's?

What is that modem?

AC1750 is not a reliable guide to model number. Many devices come with an AC tag, but it is essentially a label that Netgear, and other brands, attach to hardware to describe wifi speeds.

It sounds like it is a modem/router. You run the risk of having a very messy network with competing routers.

Two routers on your network can cause headaches. For example, you can end up with local address problems. Among other things, the other router can misdirect addresses that the Netgear router usually handles, such as routerlogin.net or the usual IP address for a router, 192.168.1.1.

This explains some of the other drawbacks.

A lot of people have Orbi systems that they run in wireless access point mode.

Arlo security cameras create their own wifi network. They come with a hub that you have to connect to your router. One hub may not have a big enough range for cameras that are far apart. The dimensions of you property don't sound that massive but it is the distance from cameras to hub that matters rather than the floor area.
