I'm back to comment more after switching from Xfinity 200Mbps to Sonic 10Gbps.
Serial: 6JY
Hardware Version: RAX120v2
Firmware Version: V1.2.8.40
Xfinity 200Mbps + ARRIS SB6190 (using the Internet WAN ethernet port)
I ran NordVPN for about 1hour on my main PC pulling 2-3 Mbps. The router would reboot 5-10 times over 60 minutes, sometimes back to back reboots.
Sonic 10Gbps + Adtran SDX662v (using the Multi Gig 5G ethernet port)
I ran speedtests on speedtest.net and fast.com and noticed that fast.com causes the router to reboot about halfway through the upload test. Happens almost every time I run a test. I ran NordVPN for 30min or so pulling 2Mbps without issue. But up/down 400Mbps seems to guarantee a reboot.

What mode is the modem in? Bridged?

Couple of options,
1. Configure the modem for transparent bridge or modem only mode. Then use the NG router in router mode. You'll need to contact the ISP for help and information in regards to the modem being bridged correctly.
2. If you can't bridge the modem, disable ALL wifi radios on the modem, configure the modems DMZ/ExposedHost or IP Pass-Through for the IP address the NG router gets from the modem. https://kb.netgear.com/25891/DMZ-on-NETGEAR-routers

3. Or disable all wifi radios on the modem and connect the NG router to the modem, LAN to LAN configure AP mode on the NG router.
Try option #2 first...

After more than two months of testing on the beta firmware, I can confirm the beta firmware also solves my RAX120v1 issues (fw 1.2.8.40). My RAX120v1 (with fw 1.2.8.40) always becomes unstable or even loses Internet connection (both wired and wireless) due to overheat. It usually happens within in few days after a reboot.
The beta firmware makes the option "Always enable fan" work on routerlogin.com/debug.htm page. The fan never spins in current released version (fw 1.2.8.40). In the beta firmware, I also have to turn on the option "Always enable fan", otherwise, RAX120v1 still reboots every few days automatically.
My setup:
modem: CM2000
router: RAX120 (v1) with fw: 1.2.8.43-rc
ISP: COX

Whats the first 3 characters of your routers serial number please.
What is the Mfr and model# of the Internet Service Providers modem/ONT the NG router is connected too?
