RAX70 router and double EX7700 extender setting up
My house is a long flat with 27 meters long.
The router is set up in the garage, one side of the house.
I have two extender, one is in the middle place and the other one is further down to the other end.
The wireless device keeps dropping off from the wifi system.
And the extender is also unstable - sometimes show up in the network map and sometimes dismiss.
How should I solve this problem?
Shall I invest in a mesh system instead of two extenders?

You should move the router.
Daisy chaining extenders is a recipe for issues. I usually recommend people move to a full mesh system when they're needing more than 1 extender.
but I'd do my best to move your router to the middle of the home. Garage's aren't a good location as the wall between the garage/home tends to be thicker, have insulation, and potentially other blocking materials. meaning the extenders connection to to the router tends to be worse/unstable.
Try for a star configuration:
Star: extender<---------router-------->extender
not the daisy chain you have
daisy: router------->extender------>extender
