The modem mfr & model# is Zyxel Gigabit Active Fiber SFU AM3100-B0.

FURRYe38 Yes - looks like that's the one. Weird thing is that with Google Wifi, it runs smoothly (although slow - as expected) and it worked fine with the v3 FW until I tried upgrading with the latest NG FW (v4).

I think that ONT has a built in router.
Do you now if the ONT is bridged or working in router mode?

FURRYe38 Tried following all your steps, but no luck. The zyxel is delivered by a service provider, sp not much I can change on that side. Also tried switching the RBR750 between router and AP mode without any changes. Service provider confirms all is good with the access. Also tried to re-upload the new FW, which went smoothly. Might be some settings I'm missing out on, but it seems to boil down to the ne FW... Tried yet again to upload the old FW, but it doesn't let me proceed (no "Yes"-button). D/L maxes out at 579 mbps, U/L at 943 mbps.
Any other pointers?
