ORBI RBK53 as a AP Mode, but needs to assign on WIFI IP adresses
We have a Orbi RBK53, which works as a AP Mode, within a small company.
The Router/AP we used before, was Apple.
We could use this, as a AP Mode, assign Static IP, and let it deliver for the Products connected by WIFI there own IP Adress.
This is only posible in Router Mode ?

This is correct. In Access Point (AP) mode, the Orbi does not perform the DHCP function, which assigns IP addresses to devices.
In most cases, routers handle the DHCP task.
Some users have chosen to install a separate DHCP server on their network because they desire features not supported by the DHCP server in their router. DHCP server software is available for a wide variety of platforms, Wiindows, Linux, (even Raspberry Pi).
