I have the orbi 850 WiFi 6 router mesh system and can’t turn my router on my isp provided modem.
My guess is that the existing modem can be made to work. Modems are not special devices and an Orbi system should work with any modem you throw at it.
What is your existing modem?
Which ISP do you have and what sort of Internet does it provide? DSL? Something else?

I’m still having connectivity issues with my router on my modem and orbi which is causing my internet to drop!
A new modem might not fix that. Why not try sorting out your existing problems before spending money on a new modem that may behave just the same?

My modem is once provided by plusnet which is my isp here in the UK.
Plusnet is the poor/frugal person's BT. (It is all on the same network) You don't tell us what that modem is – Plusnet has used several over the years – but at a guess it is some variant of the Homehub junk that BT provides.

I’ve tried and tried in the settings to make it just a modem not a router, but no luck.
There's BT for you. Consumer hostile. A lot of people hit that brick wall. I replaced my BT modem/router.

That's odd, your first message asked for modem recommendations.
No matter. You do not have to turn it off. You can put the Orbi into wireless access point mode. Many people do that. Me included. Just turn off the wifi on your Plusnet modem. The Orbi then does its wifi magic for you.
