I do have this setting configured and I have it on a separate SSID, although I don't have any devices connected to it currently. I have not installed the new adapters yet, I have a couple of Intel AX211 cards to try out at some point.
I have 1Gbps internet yes, I am connected directly from the ONT into the WAN port on the Orbi. My ISP allows me to use DHCP Option 61 for authentication and therefore I don't need any device in between.
I have opened a case with Netgear as well and summarised as much as I could, if there is a way to get debug logs or something off the devices I'm happy to try and dig further.
If you could disable this option and see if it helps in any way, that would be greatly appreciated. Please respond back if it does or doesn't.
Even with this option UNCHECKED, you will still broadcast a 6GHz (WiFi6E) SSID on the same SSID as your standard Orbi network (said SSID as 2.4GHz and 5GHz). Your AX211 cards, when installed should connect to it automatically when you log into the Orbi SSID. You may need to forget your Orbi SSID once, and reconnect to it (provide password) the first time after installing the AX211 cards so it forgets about the 5GHz connection, but after that, it should come up on the 6GHz channel as long as you are within distance of it's shorter broadcast.
This option, when enabled, kicks off a SEPARATE 6GHz SSID (separate from the one that is broadcast on the regular Orbi SSID). Then of course, you have 2 6GHz SSIDs broadcasting on top of each other as there is not a separate channel selection for the "standalone" 6GHz SSID. Plus, enabling this option does NOT disable the 6GHz SSID broadcasting under the Orbi SSID name.
Unfortunately, the User Manual doesn't really explain this - and a lot of users think they have to enable this option to get 6GHz capabilities. I am hoping Netgear will explain this a bit better in the User Manual at sometime in the near future.
We have had several users report that disabling this option stops the problems they are having with their network. It doesn't explain what is causing the network issues, but it is a work-around while still keeping 6GHz capabilities on the regular Orbi SSID.
Not saying this WILL fix your issue - but it has helped others. Please give it a try and let us know!

I've disabled it today, will see how things go and update here when I know more.
I also have a case open with Netgear and they have gathered a load of information from me. Hopefully one way or another there will be some progress.
