Would I be better off getting a 3-pack of the Orbi AC1200 or a 2-pack of the Orbi AC2200?
Both are listed at $199.99 which is perfect for my budget. I know that the Orbi AC2200 satellites have Ethernet ports as to where the AC1200 satellites do not, but this shouldn’t be a problem for us since we all game/stream on Wi-Fi anyways. We just need better Wi-Fi range in our apartment so that we can game/stream without running into high latency or ping.

If it is a normal size apartment the AC2200 2 node system would be better, as you should place your satellites an average of 30 ft away from router and other satellites. I'm not sure what models you are comparing, but gaming would be better on a Tr-Band supported Orbi system. Also AC2200 is more powerful and going to perform better than AC1200.
In closing, If you are going to use it for gaming, I would choose the AC2200 model, especially if it is Tri-Band.
