"NAS" is a code for the geography that the product is intended for - in this case it means North America. The European model would end in EUS, Australian would be AUS, etc. So it isn't related to the "NAS" in ReadyNAS - which means "network attached storage".
The -200 and -300 section relates to the platform version. The 300 is newer (and runs different firmware). In the specific case of the GS108T, there are three major versions (so far). If you look at the support area, they are called v1, v2, and v3. But in the part number, the three versions are -100, -200, and -300. The three versions each need their own firmware.
